<p>After the 2018 earthquake disaster in Central Lombok Regency, West Nusa Tenggara, various recovery efforts have been carried out involving support from local, national, and international levels in the 2018-2019 period. The impact of losses, both in the form of materials and casualties, is enormous, with total infrastructure damage estimated at Rp 9.1 billion1. In the context of accelerating rehabilitation and reconstruction, architects play a role as key agents who act as balancers, catalysts, and harmonisers in the process of rebuilding affected communities. This research is based on the activities of the Indonesian Institute of Architects (IAI) East Java Province 2 and Titian Foundation 3, focusing on providing assistance to affected communities in Rembitan Village, Pujut Sub-district, Central Lombok, through the planning and construction of a Community Learning Centre (CLC) 4 in the 2019-2020 period. This assistance includes professional assistance to ensure the building is built in accordance with its recovery objectives. Using contextual-based qualitative research methods and comparative analysis, this study aims to re-evaluate the process of community recovery through physical infrastructure development. In particular, a new built environment that is based on the daily activities of the local community is expected to provide significant changes in rehabilitation and reconstruction efforts. By integrating all of the above elements, the CLC can become a place that encourages the creation of a resilient community. The CLC not only functions as a place of learning, but also as a centre for community coordination and support in dealing with disasters. Through adaptive design, good collaboration, and the utilisation of local resources, CLCs can help communities to be better prepared for unexpected challenges, reduce vulnerability, and increase resilience and adaptability. The main focus is on how regional architectural elements are integrated into modern building facade designs to create sustainable cultural identity. Through a case study approach of several government buildings across different regions in Indonesia, this research analyzes the effectiveness of ornamentation in bridging tradition and modernity, as well as its ability to adapt to environmental and social changes. The research methodology employs visual theory and analysis. Results show that facade ornamentation, when designed with consideration of local context and sustainable design principles, can enhance building resilience both culturally and environmentally. Climatological considerations by modern society are not always correct when used to examine the meaning of building orientation by traditional society. The expression of the facing direction of the Madura traditional house building or commonly called Taneyan Lanjhang, is one example of a cultural result that is based more on the meaning underlying the thinking patterns of the community, it is strongly influenced by the existence and way of life of the community. Another factor that is also very instrumental in the orientation of Taneyan Lanjhang is the condition of the Madura Government since the 15th century, the beginning of the entry of Islam, not only affects the change of behavior and culture of the Madurese people, but also affects the Orientation of the Taneyan Lanjhang House Arrangement which is facing towards the Qibla (West). <p>Office buildings constructed in the 2000s often face significant challenges in achieving energy efficiency, as they were not designed to adapt to modern climate conditions. This limitation leads to high energy consumption, reduced functionality, and performance degradation over time. Addressing these issues requires the implementation of retrofit strategies to improve energy efficiency, space comfort, and building resilience. This study focuses on analyzing existing research to identify effective retrofitting approaches for enhancing energy performance in office buildings. The study emphasizes passive strategies such as shading, double-skin facades, green roofs, and the use of environmentally friendly technologies and materials for building envelope modifications. Utilizing a literature review method, data were gathered from 90 research articles on retrofit strategies for existing buildings. The findings demonstrate that building envelope retrofits can significantly reduce energy consumption, improve occupant comfort, and enhance overall performance. The coastal area of Lamongan Regency from year to year experiences rapid growth and development in various sectors that can cause damage to the coastal environment and marine ecosystems [2]. In addition to the fisheries sector, economic improvement in Lamongan is also driven by the tourism sector, especially religious tourism in Kemantren village where the Tomb of Sheikh Maulana Ishaq is located. one of them is the development of public facility development along the coast of Lamongan regency which chooses reclaimed land as land for the development of public facilities [3]. Therefore, it is important to conduct research to determine the development factors of public facilities that use reclaimed land as land for public facility development. The method used in this research uses a qualitative method by using data search methods obtained from interviews and direct observation in real life which will be described descriptively. <p>The Main Building Design of the Public Works and Public Housing Ministry (PUPR) in Jakarta has a significant impact on energy savings inside, according to the Jatmika Adi Suryabrata (Department of Architecture and Planning, UGM), in 1 month this building achieved Energy Cost Savings of more than IDR 230 million. This paper analyzes building design elements that contribute to increasing energy efficiency, examines four key design elements: building mass form, façade materials, natural lighting, and shading. Each of these elements plays a crucial role in enhancing energy efficiency in the main building of the Ministry of Public Works and Housing.. In addition, the aspect of resilience is a crucial element of the design, ensuring that the building can withstand climate change and potential disasters. Through a case study approach and empirical data analysis, the research results show that efficient building design can reduce electricity consumption by up to 30-50%. <p>Peneleh European Cemetery in Surabaya is the oldest European cemetery whose existence is very important for the historical narrative of Surabaya City. With an area of almost 4.5 hectares, this cemetery has a large number of tombs, with very diverse shapes. From the diversity of the shape of the gravestone and the shape of the tomb when viewed visually has many similarities and differences, but there has never been a record that mentions the exact number of typological forms of the tomb, so a study is needed that can classify various kinds of typological forms of the tomb. The classification of this tomb shape needs to be done immediately considering the condition of the tombs in the Peneleh European Cemetery is increasingly threatened by its physical form.</p> <p>In classifying or researching the typology of Peneleh Tombs, data collection can be done by several methods, especially the direct observation method to each tomb and then measuring, recording and describing its shape. Another thing that needs to be done to determine the typology of these tombs considering that many are no longer intact is the search for old data, both in the form of records, maps and also photos that can be used for comparison or comparison with current conditions. Recording based on interviews, especially with residents in the Peneleh area, is also an important thing to do considering that in memory they have an idea of how the shape and condition of the tombs 10-20 years ago.</p> <p>Related to the Typology of Tombs, when associated with the development plan of Peneleh European Tombs into one of the Historic tourist destinations in Surabaya City, the determination of Typology is very important because it can be a guide or source of data that can be used for the <em>preference of the </em>management in this case the Surabaya City government when going through the process of revitalization and repair of Tombs. This research aims to formulate a resilience development strategy based on tourism in Gili Mandangin by applying the Smart City concept [2] and the enhancement of connectivity among stakeholders.<br>The research method used involves qualitative analysis through literature studies, interviews with relevant parties, and field observations to understand the conditions and challenges faced. The Smart City approach [2] is proposed as a solution to leverage technology in resource management, improve information access, and enhance system integration in the tourism sector. In addition, the improvement of connectivity [3]. among local communities, industry players, and the government is seen as an important step to create a sustainable and resilient tourism ecosystem.<br>The implementation of Smart City in Gili Mandangin can strengthen tourism resilience by optimizing destination management, improving public service efficiency, and expanding market access for local products [4]. <p>This paper discusses the application of green building concepts in government buildings, focusing on the Office of Public Housing, Settlement Areas, and Spatial Planning of East Java Province. Green buildings have become important in the context of sustainability, energy efficiency, and reducing environmental impact. According to data from the Intergovernmental Panel on Climate Change (IPCC), the rapid warming of the Earth over the past century is not due to natural causes. It is the commitment of the East Java Provincial Office of Public Housing, Settlement Areas, and Public Works to participate in reducing greenhouse gas emissions, which is one of the causes of global warming. This office is also tasked with implementing the mandate of Government Regulation No. 16/2021, which expects government office buildings to serve as pilot projects for Green Buildings (GB), and to carry out the mandate of Government Regulation No. 33/2023, which requires government buildings to implement energy management as a parameter for assessment in GB.</p> <p>Through a comparative analysis of design in the use of environmentally friendly materials and energy management systems, this study evaluates the effectiveness of implementing the principles of green buildings. The research results indicate that the implementation of the green building concept in the PRKPCK building not only meets sustainability standards but also enhances user comfort and the image of a government that is responsive to environmental issues. Urban parks in their provision and management are public Resilient public spaces are open areas that help cities become more resilient overall as urban ecosystems in a number of ways, including lessening the effects of climate change, lowering the hazards and vulnerabilities of the urban environment, and fostering social cohesion. Through a qualitative approach, the first analysis is to review the theories related to the conception of resilient urban park design. Second, analyze the aspects of the conception of resilient city park design in the sampling of city park areas in Surabaya. Third, to prepare urban park design criteria that can realize and maintain sustainability while improving the quality of life of the community.</p> <p>The results of the study show that, first, it finds indicators of the resilience of a city park. Second, the findings of indicator identification based on the conditions and characteristics of city park sampling in Surabaya. Third, finding design criteria such as the minimum area that must be planted or covered by vegetation, vegetation density, the proportion of the park area greater than the pavement, the availability and quality of infrastructure, cleanliness and maintenance maintained, waste processing, a wider target of users, the availability of facilities for various visitor activities, ease of access, the provision of inclusive social spaces, sufficient lighting and community participation in planning and Park management can increase a sense of ownership and sustainability. <p>Residential areas that directly border their coastline have a significant risk of natural disaster. One of them is the tidal flood disaster that threatens throughout the year, so that it greatly affects the activities of residents who mostly work as traditional fisherman. Based on the result of previous research, it was recorded that several tidal floods occurred within a period of one year which resulted in seawater inundation in residential areas, a significant decrease in the elevation of the sea wall and damage to traditional fishing boats, the impact of tidal floods was exacerbated by the phenomenon of significant increase in the number of houses that exceeded the land boundaries according to the designation of space. The Kejawen Lor area, Bulak District, is the coast of Surabaya City, which is prone to tidal floods. According to Presidential Regulation No. 51 of 2016, the safe distance between the shoreline and residents houses and also the arrangement of open spaces for evacuation and circulation are currently considered not to meet safety and feasibility standards. Through qualitative research, we want to find effort to prevent and reduce the negative impacts after the tidal disaster in the Kejawan Lor area to provide design proposals for improving the sea wall infrastructure and arranging green open spaces to beautify the area. <p>Competition is getting tighter and making consumers more selective in choosing housing on the outskirt of Surabaya. This makes developers have to provide alternative decent housing solutions at affordable prices. Development on contured land in the Menganti sub-district area of gresik regency was chosen because the location is still close to Surabaya. This research was conducted using the phenomenological method, data collection for this research use interview with marketing staff. The research result shoe that there are several criteria that influence consumers choice when buy a home, including paying attention to product quality so that it is resilient to land contours, understanding what consumers want by building infrastructure that is safe against floods and landslide, than building public facilities and park with more attractive architectural design in areas that are considered unprofitable to increase consumer confidence in why it is worth buying in those location. In clonclution, to convince potential consumers, strategy is needed in housing design by applying the design citeria mentioned above in planning safe infrastructure and arranging more attractive public facilities so that the location becomes more profitable. <p>The relocation of Indonesia's capital city from Jakarta to East Kalimantan resulted in increased urbanization in East Kalimantan. The aim of relocating the capital city is to reduce the burden on Jakarta which is experiencing various problems, such as traffic jams, land subsidence, pollution, and an excessively high population burden. As a result, there has been an increase in the number of people migrating and returning to East Kalimantan. On the other hand, there is the potential of East Kalimantan which has natural resources that have not been developed optimally, including the tourism sector. One thing that is unique is Kumala Island as a tourist attraction which is located in the middle of the Mahakam River. Currently, the island still receives little attention in its development and improvement.</p> <p>This research will be conducted using observational research methods and directly analyzing the level of damage to buildings and their surrounding environment. It can be concluded that several buildings need to be rehabilitated using a resilience architecture approach to achieve building designs that are more resistant to challenges from environmental change and natural disasters.</p> <p>This approach not only focuses on the physical resilience of buildings and infrastructure, but also on environmental sustainability, adaptation to climate change, and the welfare of local communities. <p>The rapid advancement of digital technologies has led to the emergence of omnichannel marketing as a dominant approach in modern retail. This research examines how integrated marketing strategies across various online and offline channels influence consumer decision-making in online purchases. Utilizing the Technology Acceptance Model (TAM) and consumer behavior theories, this study employs a quantitative approach with survey data collected from 350 respondents who have experienced omnichannel retail environments. Key variables analyzed include channel consistency, cross-platform personalization, and seamless user experience. The findings indicate that consistency in messaging and ease of transitioning between channels significantly enhance consumers’ perceived convenience and trust, ultimately leading to stronger purchase intentions. Moreover, personalization across touchpoints and real-time responsiveness further amplify the effectiveness of omnichannel strategies. This research aims to investigate the effectiveness of chatbot integration in enhancing customer service quality across various e-commerce platforms. Utilizing a comparative case study approach, the study analyzes chatbot performance on three major platforms—Tokopedia, Shopee, and Lazada—based on parameters such as response accuracy, resolution time, customer satisfaction, and user experience. Data were collected through user surveys (n=300), platform interaction logs, and in-depth interviews with customer service managers. The findings reveal that while all platforms benefit from AI chatbot deployment, differences exist in implementation quality, natural language processing (NLP) capabilities, and personalization levels. Shopee's chatbot demonstrates superior speed and contextual understanding, whereas Tokopedia's chatbot excels in multilingual support. Customer satisfaction is significantly influenced by the chatbot’s ability to provide accurate and empathetic responses. By applying the Source Credibility Theory and brand trust frameworks, this research employs a quantitative survey method involving 300 active social media users who follow and engage with influencers across platforms such as Instagram, TikTok, and YouTube. This research focuses on assessing the tensile strength of ST 37 steel welded <br>using GTAW with different tungsten electrode diameters and current settings. The electrode <br>sizes used were 1.6 mm, 2.4 mm, and 3.2 mm, paired with current levels of 60 A, 80 A, and <br>100 A. Tensile strength testing was performed following ASTM E8 standards. The results <br>indicated that the 3.2 mm electrode with 100 A current produced the highest tensile strength <br>at 43.13 kg/mm², while the 1.6 mm electrode with 60 A current yielded the lowest tensile <br>strength at 29.75 kg/mm². However, in terms of pricing, it can be said to be fairly expensive, particularly for <br>middle-class people. Apartment, with the smallest type being a studio (22 m2), making it <br>affordable to middle-class people. However, this condition also raises concerns about <br>residents' comfort, especially as the number of family members increases. If one wants to buy <br>another apartment unit, price is also a consideration. This study aimed to determine the level <br>of affordability and comfort for middle-class people.<br>The method used was descriptive-quantitative with primary data collection by <br>conducting surveys with the residents and gathering reports provided by management. The <br>findings revealed that in comparison to Maslow's Hierarchy of Needs, the needs of residents <br>in Menara Rungkut Apartment that are met are physiological, security in having a place to <br>stay, and a little social fulfillment. In terms of affordability, they chose Menara Rungkut <br>Apartment because of its low price and proximity to the office. <p>UD. Gadjah Delta is an industry that manufactures kitchen equipment, including soto <br>containers, with a production capacity of up to 1,400 - 1,500 pieces per day. The production <br>process for the soto container begins with cutting the raw material, bending the left and right <br>edges, perforating the handle ends, and finally, cutting a half-circle at the handle ends. The <br>perforation and cutting of the handle ends are carried out using two manual machines <br>operated by two operators. The production results from these two machines have shown a <br>relatively high reject rate. The design of a punch machine, as developed in previous research <br>by Wati & Hery (2023), led to a significant increase in production. Based on this research, this <br>community service project is implementing the design by creating a punch machine that <br>performs both perforation and cutting of the soto container handles simultaneously. The <br>newly designed punch machine can produce more output than before, reaching 375-380 pieces <br>per hour. This study will <br>discuss the weights of variables that influence the magnitude of contingency costs. The risk <br>evaluation carried out focuses on risks related to project construction execution. Although there have been efforts from the city government through waste <br>management initiatives and waste-to-energy processing technology, the waste problem still <br>needs to be fully resolved. Community participation is considered an essential factor in the <br>success of sustainable waste management. A qualitative descriptive method describes <br>community participation in urban waste management in Surabaya. Data were collected <br>through in-depth interviews, direct observation, and documentation of related policies. The <br>study subjects included residents involved in the waste management program and <br>government and private sector parties collaborating in waste management. The study results <br>indicate that community participation through the Waste Bank program and other social <br>innovations significantly reduces Surabaya's waste management burden. However, the <br>varying levels of community participation are a challenge in themselves. Policies supported <br>by the government and social innovations have been shown to increase the effectiveness of <br>waste management but still require increased active participation and public awareness. The current mapping system lacked the necessary detail to identify the <br>locations of healthcare service points and specific health issues, such as maternal health, <br>elderly care, and stunting prevalence. Through consultations with village officials and data <br>collection from healthcare posts, both spatial and non-spatial data were integrated into a <br>comprehensive thematic map. This map provides a clear visualization of health conditions <br>across the village, enabling more targeted and efficient healthcare interventions. The map was <br>created in both printed and digital formats, with the digital version allowing for regular <br>updates and access via online platforms. The implementation of GIS has enhanced the<br>village’s ability to manage public health data securely, minimizing the risks of data loss. <br>However, challenges related to the training of village officials in GIS usage and the availability <br>of technological infrastructure need to be addressed for long-term sustainability. <p>Gas Tungsten Arc Welding (GTAW) is a widely used welding method in the construction industry due to its high precision and efficiency. This study objective is to identify welding defects in ST-37 steel using parameters in tungsten electrode diameters and welding current. The tungsten electrode diameters used were 1.6 mm, 2.4 mm, and 3.2 mm, with current levels of 60 A, 80 A, and 100 A. After welding, a penetrant test was conducted according to ASME 2010 Section 6 standards to identify the types and number of welding defects. The test results indicated that the combination of a 3.2 mm tungsten electrode and a 60 A current produced the highest number of defects, with eight instances of porosity, cracks, and tungsten inclusions. In contrast, the same 3.2 mm electrode with a 100 A current resulted in the fewest defects, with only two defects identified, namely cluster porosity and tungsten inclusion. These findings suggest that higher current levels in GTAW welding tend to reduce the occurrence of welding defects in ST-37 steel, whereas lower current levels increase the likelihood of defects. <p>This study aims to examine safety awareness among recreational boat passengers at Teluk Batik, focusing on their perceptions of safety practices while on board and throughout their trips. A survey was conducted with 100 recreational boat passengers using a structured questionnaire. The results, analyzed through multiple linear regression, reveal a significant relationship between passenger safety awareness and the implementation of individual and organizational safety practices by boat operators. Specifically, passengers exhibited a p-value of 0.00433, indicating a high level of pre-boating safety preparation. Additionally, the analysis yielded a p-value of 5.167E-05, suggesting that recreational boat operators at Teluk Batik actively adhere to safety procedures and best practices. These findings underscore the importance of passenger understanding of safety protocols and the enforcement of these measures by boat operators in enhancing overall passenger safety. This activity aims to improve the production efficiency and human resource capacity of MARENDRA PYA through the procurement of production equipment and digital marketing training.</p> <p>The stages of implementing the activity begin with procuring an automatic mixer that increases production efficiency. The procurement of an automatic mixer involves workshops around the partner's residence. The second activity is an online marketing workshop through platforms such as Instagram, Shopee, and Tokopedia. The last activity is to design the business logo. The implementer os the owner of MARENDRA PYA since the business is controlled by the owner himself.</p> <p>The results of this community service program has increase 30% in production capacity and significant improvements in packaging design. The research methodology includes system requirements analysis, hardware and software design, and simulation using PLC software. Key components such as the conveyor, motor, sensors, and cutting tools were identified to design the control circuit within the PLC. The simulation results show that this system can increase production speed and allows integration with other automation systems, thus improving operational efficiency. The simulation has demonstrated the system's effectiveness in boosting efficiency. The village tries to resolve the case at the village level and then refer it to the authorities. The Community-Based Integrated Child Protection Group has problems in strengthening the capacity to handle child cases at the village and referral levels. The service carried out from August to November 2024 is carried out with training using adult education methods. The educational media used is snakes and ladders for protection and handling of children's cases. This educational teaching aid makes it easier to explain the process in child cases, and the use of restorative justice including the role and function of PATBM cadres and the Candipari village authorities. The use of APE snakes and ladders positions all participants as active and involved by thinking about the statements on the cards used to mark ladders and snakes. This study aims to examine the Death Row Phenomenon as a form of inhumane punishment. The research method employed is normative legal research, utilizing both a statutory approach and a conceptual approach. The treatment of death row inmates during this waiting period clearly violates human rights principles, as it is deemed inhumane and degrading, constituting a form of torture. The Death Row Phenomenon illustrates that the death penalty involves not only physical execution but also the prolonged waiting process, which can trigger various forms of suffering. Inmates often experience mental disorders, long-t]erm depression, and anxiety, further deteriorating their lives. The uncertainty surrounding the timing of the execution adds to their psychological burden, creating a prolonged atmosphere of terror. Abortions performed by vulnerable groups, such as people with mental disorders (ODGJ), are critical issues within the realms of law and reproductive health. Abortion is strictly regulated with specific conditions and exceptions, especially in cases involving victims of rape and life-threatening medical conditions. ODGJ represents a vulnerable group with limitations in making independent and legally valid medical decisions. This research utilizes a normative juridical method with legislative and conceptual approaches. The study’s findings indicate that abortion is permitted under certain conditions that meet medical and legal requirements, particularly in cases of pregnancy resulting from rape or life-threatening conditions for the mother. The Reproductive Health Law (Law Number 17 of 2023) grants women the right to choose abortion under specific circumstances, considering both physical and mental safety. Forms of protection for ODGJ undergoing abortion include access to comprehensive reproductive health services, legal assistance, and the guarantee of medical decisions supported by family or guardian consent. <p>In the event of a simultaneous vacancy in the offices of the President and Vice President in Indonesia, Article 8, paragraph (3) of the 1945 Constitution mandates that the presidential duties are temporarily assumed by three ministers: the Minister of Foreign Affairs, the Minister of Home Affairs, and the Minister of Defense, collectively referred to as the triumvirate. In this situation, the triumvirate ministers perform presidential duties on an interim basis, raising the need to understand the scope of their accountability in executing these functions. This study analyzes the legal accountability of the triumvirate as temporary executors of presidential duties, focusing on the limitations of authority and obligations assigned to them. The research employs normative legal methods, utilizing a legislative approach to understand the constitutional basis for the triumvirate in the 1945 Constitution, as well as a conceptual approach to outline the duties and responsibilities of the triumvirate within the context of constitutional law. The findings reveal that the triumvirate holds only limited administrative authority, closely monitored by the House of Representatives (DPR) and other relevant institutions, as Indonesia adheres to a presidential system of government. The accountability of the triumvirate is limited and aimed at ensuring the continuity of government operations until the election of a definitive President and Vice President. <p>Current Over the past decade, deep neural networks have progressed rapidly, with computer vision consistently achieving new performance milestones and becoming a part of daily life. In target detection, the YOLO model stands out as a popular real-time detection algorithm, known for its speed, efficiency, and accuracy. This study focuses on enhancing the latest YOLOv8 model to improve small object detection and compares it with other YOLO versions. Using YOLOv8 as a foundational deep learning algorithm, we introduced several optimizations, including redefining the detection head, narrowing its perceptual field, and increasing the number of detection heads to better capture fine details in small objects. We then compared this optimized YOLOv8 model with established YOLO models, such as YOLOv3 and YOLOv5n. The experimental results indicate that our optimized model achieves higher accuracy in detecting small objects. This research offers a promising approach for small object detection with strong application potential. <p>This research focuses on handling petty corruption which does not meet the elements of using a restorative justice approach. Petty's various corruption crimes have been detrimental to state finances. The limitation on state losses that can be categorized as petty corruption is below 100 million rupiah, while the costs that will be incurred to complete the formal legal process can reach 100 million rupiah or more. An alternative for handling petty corruption cases is by applying a restorative justice approach model to reduce state losses. The research was carried out using normative research methods with a conceptual approach and a statutory approach. The research results show that the restorative justice approach cannot be used as an alternative to resolve petty corruption because corruption regulations require criminal punishment for perpetrators of corruption even though they have repaid state losses. The restorative justice approach is not used in order to provide a deterrent effect for perpetrators of corruption and prevent the recurrence of criminal acts of corruption as well as a precedent for perpetrators who have the potential to commit subsequent criminal acts of corruption. <p>Shiitake mushrooms (<em>Lentinula edodes</em>) are well known as a food source with numerous health benefits, mainly due to their protein and fiber content, which support bodily functions. These mushrooms also contain various phytochemicals, including secondary metabolites and antioxidants. Some of the secondary metabolites found in shiitake mushrooms include alkaloids, flavonoids, steroids, terpenoids, saponins, polysaccharides, tannins, vitamin C, vitamin D, and lipids. Additionally, shiitake mushrooms possess anticancer, anti-inflammatory, antioxidant, antibacterial properties, and can enhance the immune system. Compounds such as eritadenine, sterols, and beta-glucans present in shiitake mushrooms play a role in lowering cholesterol levels. Given their rich nutritional profile, shiitake mushrooms have the potential to be used as a partial substitute for wheat flour in cookie production, especially for products aimed at pregnant women.This study aims to evaluate the effect of substituting shiitake mushroom flour on the nutritional content, including vitamin C, vitamin D, folic acid, and protein, as well as on the texture and sensory preferences of the cookies. Various proportions of wheat flour substituted with shiitake mushroom flour were tested, and the results showed that a 30% substitution of shiitake mushroom flour produced cookies with 5.13 mg/100 g of vitamin C, 1.26 IU/100 g of vitamin D, 193.964 µg/100 g of folic acid, 7.256 g/100 g of protein, and a crisper texture, averaging 36.98 mm/50 g/10 s. The higher the percentage of shiitake mushroom flour used, the higher the content of vitamin C, vitamin D, folic acid, protein, and the crispness of the cookies. Panelists preferred the color of cookies with 15% and 22.5% shiitake mushroom flour substitution, while the best aroma and flavor were found in cookies with 15% substitution. The study concludes that shiitake mushrooms have the potential to be used as a natural additive that can enhance the nutritional value and crispness of cookies without compromising sensory quality, making them suitable for development as healthier food products.</p>WardahRini Rahayu Sihmawati
